Meal Deal

Each week, I'll share a recipe based on deal items. The idea is to inspire you to cook great meals on a budget. My wife LOVES tri-tip, so this week I’m taking advantage of a deal at Fred Meyer to make her one of her favorites with a slight twist.

Oven-Roasted Tri-Tip with Avocado Salsa and Roasted Broccoli

Yields: 6 servings | Cost: About $19.10 total (About $3.18 per serving) | Time: About 45 minutes

Ingredients

  • 1 tri-tip roast (approximately 2.5 pounds)

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 2 teaspoons kosher salt

  • 1 teaspoon black pepper

  • 1 teaspoon dried oregano

  • 1 teaspoon paprika

  • ½ teaspoon cumin

  • 2 pounds broccoli crowns

  • 3 medium avocados

  • 1 lime, juiced

  • ½ red onion, finely diced

  • 2 tablespoons cilantro, chopped

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • 8 sandwhich buns (optional, for sandwiches with leftovers)

Instructions

  1. Preheat your oven to 425°F.

  2. Remove the tri-tip from refrigerator 30 minutes before cooking to bring to room temperature.

  3. In a small bowl, combine garlic, salt, pepper, oregano, paprika and cumin.

  4. Rub the tri-tip with olive oil, then coat evenly with the spice mixture.

  5. Cut broccoli crowns into florets and toss with 1 tablespoon olive oil, ½ teaspoon salt, ¼ teaspoon pepper, and ½ teaspoon garlic powder.

  6. Make the avocado salsa: Dice avocados and combine with lime juice, red onion, cilantro, salt and pepper. Cover and refrigerate until serving.

  7. Heat a large oven-safe skillet (cast iron works best) over medium-high heat on the stovetop.

  8. Add 1 tablespoon olive oil and swirl to coat the bottom of the pan.

  9. Place the tri-tip in the hot skillet and sear for 3-4 minutes per side until nicely browned.

  10. Transfer the skillet to the preheated 425°F oven.

  11. After 10 minutes of cooking the tri-tip, spread the seasoned broccoli florets in a single layer on a baking sheet and place in the oven on a lower rack.

  12. Continue cooking both until the tri-tip reaches an internal temperature of 130°F for medium-rare (about 20-25 minutes total cooking time) and the broccoli edges start to brown (about 12-14 minutes).

  13. Remove the tri-tip from the oven, transfer to a cutting board and tent with foil. Let rest for 10-15 minutes.

  14. Check the broccoli — if it needs more time, leave it in the oven while the meat rests.

  15. Serve: Slice the tri-tip against the grain. Note that the grain direction changes midway through the roast, so cut it in half at the point where the grain changes direction, then slice each half separately. 

  16. Serve tri-tip slices with roasted broccoli and avocado salsa.

Tips

  • Temperature matters: For best results, use a meat thermometer to avoid overcooking.

  • Grain direction: The grain of a tri-tip changes direction, so pay attention when slicing to ensure tenderness. (This is a great video tutorial I use every time.)

  • Don't overcook: Keep tri-tip medium-rare or it will turn tough.

  • For meal prep: This tri-tip makes excellent sandwiches. Place leftover slices on buns with avocado salsa for lunch the next day.

  • Make it spicy: Add a diced jalapeño to the avocado salsa for heat.

  • For extra flavor on the broccoli: Try sprinkling with Parmesan cheese right after roasting or add a squeeze of lemon juice for brightness.
