Meal Deal

Over the next week, so I plan on making one of my favorite recipes: oven-roasted chicken shawarma (I can’t believe I don’t have a photo of this dish, especaily considering how often I make it). We’re tweaking it to take advantage of what’s in season and what’s on sale this week. Let’s dig in.

Oven-Roasted Chicken Shawarma with Cucumber-Melon Salad and Green Bean Rice Pilaf

Based on Sam Sifton’s Oven-Roasted Chicken Shawarma recipe for New York Times Cooking. Yields: 4-6 servings | Cost: About $18.75 total (About $3.13-$4.69 per serving) | Time: About 1 hour plus marinating

Ingredients:

For the Chicken Shawarma:

For the Cucumber-Melon Salad:

  • 1 Kiss melon, cubed

  • 2 large cucumbers, diced

  • ¼ red onion, thinly sliced

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • 1 tablespoon fresh mint, chopped

  • Salt and pepper to taste

For the Green Bean Rice Pilaf:

  • 1 lb. local organic green beans, trimmed and cut into 1-inch pieces

  • 1½ cups basmati rice

  • 3 cups chicken broth

  • 2 tablespoons butter

  • ½ teaspoon salt

For Serving:

  • Pita bread or naan

  • Plain Greek yogurt

  • Hot sauce

Instructions

Prep and make the chicken:

Make the rice pilaf:

  1. Bring salted water to boil. Add green beans and cook 4-5 minutes until crisp-tender. Drain and set aside.

  2. Rinse rice until water runs clear. In a saucepan, melt butter and add rice. Toast 2 minutes.

  3. Add broth and salt, bring to boil. Reduce heat, cover, and simmer 15 minutes.

  4. Remove from heat, stir in green beans, let stand 5 minutes, then fluff with fork.

Prepare the salad:

  1. Combine cubed melon, diced cucumbers, and sliced red onion in a bowl.

  2. Whisk together olive oil, lemon juice, mint, salt, and pepper.

  3. Toss salad with dressing just before serving.

Tips

  • Chicken type: If you substitute chicken breasts for thighs, you’ll want to shave about 10 to 15 minutes off the roasting time since white meat cooks faster and is less forgiving of overcooking

  • Food safety: Use a meat thermometer to ensure the chicken reaches 160°F before pulling from the oven

  • Marinating time: Even 1 hour makes a difference, but overnight is ideal for maximum flavor

  • Crispy finish: For extra crispy edges, sauté the roasted chicken briefly in a hot skillet after roasting (or turn on your broiler for the last 2-3 minutes of the roasting process).

  • Make-ahead: The cucumber-melon salad can be made several hours ahead and kept chilled

  • Spice substitutions: If you don't have all the spices, focus on cumin, paprika, and turmeric for the core shawarma flavor

This adapted version of Sam Sifton's NYT Cooking chicken shawarma recipe maintains all the complex Middle Eastern flavors while taking advantage of New Seasons' best deals. We round it out into a complete meal with the refreshing cucumber-melon salad and satisfying green bean rice pilaf. Serve the shawarma family-style with warm pita or your favorite flatbread (I prefer naan), letting everyone build their own plates!
