Meal Deal
Part of Stumptown Savings’ mission is to help us all cook better meals at home. My wife and I have already started cooking better meals and more often. This week, my wife turned some blueberries and local strawberries into an amazing workday breakfast. Last week, I cooked my pulled pork recipe to perfection (and we ate off that for three days, plus froze half the meat for later meals). This week, we’re taking advantage of the fish deals to make some fish tacos!
Fresh Rockfish Tacos with Peach Salsa
Yields: 4 servings | Cost: About $19.75 total (About $4.94 per serving) | Time: About 30 minutes

Ingredients
1¼ pounds fresh wild-caught rockfish fillets
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon garlic powder
½ teaspoon kosher salt
¼ teaspoon black pepper
2 tablespoons olive oil
2 large peaches or nectarines, diced
¼ cup red onion, finely diced
2 tablespoons fresh lime juice
1 jalapeño, seeded and minced
2 tablespoons fresh cilantro, chopped
Salt to taste
½ cup sour cream
1 tablespoon lime juice
½ teaspoon garlic powder or one clove minced garlic
Pinch of salt
8 corn tortillas
2 cups shredded cabbage
1 avocado, sliced
Lime wedges for serving
Instructions
Make the peach salsa: Combine diced peaches, red onion, lime juice, jalapeño, and cilantro in a bowl. Season with salt and set aside to let flavors meld.
Prepare the crema: Whisk together sour cream, lime juice, garlic powder or minced garlic, and salt until smooth. Refrigerate until ready to use.
Season the fish: Pat rockfish fillets dry and cut into bite-sized pieces. Mix chili powder, cumin, garlic powder, salt, and pepper in a small bowl. Season fish pieces on both sides with the spice mixture.
Cook the fish: Heat olive oil in a large skillet over medium-high heat. Cook fish pieces for 3-4 minutes per side until golden brown and fish flakes easily. Remove the fish from the heat and set aside.
Warm tortillas: Heat tortillas in a dry skillet for 30 seconds per side until warm and slightly charred.
Assemble tacos: Fill each tortilla with fish, shredded cabbage, peach salsa, avocado slices, and a drizzle of crema. Serve with lime wedges on the side.
Tips
Fish selection: Rockfish is perfect for tacos because it holds together well and has a mild, sweet flavor that pairs beautifully with the peach salsa. But feel free to sub for Halibut, salmon, or any other cut of fish on sale this week.
Peach prep: Choose peaches that are ripe but still firm for the best salsa texture. If peaches aren't quite ripe, let them sit at room temperature for a day or two.
Make ahead: The peach salsa and crema can be made up to one day ahead and refrigerated.
Spice level: Remove jalapeño seeds for milder heat, or add extra for more kick.
Leftover fish: Use any leftover seasoned fish in salads or grain bowls the next day.
