This week, we’re taking advantage of the fantastic produce and protein deals at Albertsons/Safeway to create a meal that’s perfect for a hot summer night. This entire recipe comes together on the grill (or a grill pan), so you can keep the kitchen cool.

Grilled Lemon-Herb Chicken with Zucchini and Corn Salad

Yields: 4 servings | Cost: About $14.96 total (About $3.74 per serving) | Time: About 30 minutes

Ingredients

For the Lemon-Herb Chicken:

  • 1.5 lbs. fresh boneless skinless chicken breasts

  • 2 cloves garlic, minced

  • 1 lemon, zested and juiced

  • 2 tablespoons olive oil

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

For the Grilled Zucchini and Corn Salad:

  • 2 lbs. local zucchini or yellow squash, sliced into ½-inch planks

  • 4 ears of corn, shucked

  • 1 Walla Walla sweet onion, cut into wedges

  • 1/4 cup fresh parsley, chopped

  • 2 tablespoons olive oil

  • 1 tablespoon red wine vinegar

Instructions

Prepare and cook the meal:

  1. Preheat your grill or a stovetop grill pan to medium-high heat.

  2. In a bowl, whisk together the minced garlic, lemon zest, lemon juice, olive oil, oregano, salt, and pepper. Add the chicken breasts and toss to coat. Let marinate for at least 15 minutes.

  3. In a separate large bowl, toss the zucchini planks, corn on the cob, and onion wedges with 2 tablespoons of olive oil, salt, and pepper.

  4. Place the chicken and vegetables on the hot grill. Grill the chicken for 6-8 minutes per side, or until cooked through (internal temperature reaches 165°F). Grill the vegetables until tender and lightly charred, about 8-10 minutes, turning occasionally (not too often, you want nice grill marks!).

  5. Remove everything from the grill. Let the chicken rest for 5 minutes before serving.

Assemble the salad:

  1. Once the corn is cool enough to handle, stand it on its end and carefully slice the kernels off the cob into a large bowl.

  2. Chop the grilled zucchini and onion into bite-sized pieces and add them to the bowl with the corn.

  3. Add the chopped parsley and red wine vinegar to the vegetable mixture. Toss to combine, and season with additional salt and pepper to taste.

  4. Serve the grilled chicken alongside the warm zucchini and corn salad.

Tips

  • No Grill? No Problem: All components can be cooked in a cast-iron skillet or grill pan on the stovetop over medium-high heat. 

  • Easier Prep: If you make it inside, cut the zucchini and onion to bite-sized pieces before sautéing over medium hear with frozen corn kernels.

  • Add Cheese: Crumble some feta or goat cheese into the salad for a creamy, tangy addition.

  • Make-Ahead: The salad is delicious served warm or at room temperature, making it a great option for meal prep or a potluck.

  • Herb Variations: Feel free to substitute the oregano with other herbs like thyme, rosemary, or a combination of Italian seasonings.
