Correction: I had the wrong unit of pricing for the local green or red Bartlett pears on sale at Albertsons and Safeway. The deal has been corrected.

Meal Deal

With the forecast calling for what’s happing up to be a perfect summer weekend, we’re firing up the grill. This recipe is built around a fantastic weekend deal at QFC, making it an affordable way to celebrate the closing days of grilling season. It’s a classic pairing — juicy pork and sweet, caramelized apples — with a smoky twist that’s perfect for a warm evening. By shopping the sales at QFC, you can pull together this impressive end-of-summer dinner for a family of four for less than $4 per person.

Grilled Pork Chops with Spiced Apples

Yields: 4 servings | Cost: About $13.40 total (About $3.35 per serving) | Time: About 30 minutes

Featuring deals from QFC through Sept. 9.

Ingredients

  • 4 boneless pork chops, about 1-inch thick (approx. 2 lbs. total)

  • 2 large Cosmic Crisp apples

  • 2 tbsp. olive oil

  • 1 tbsp. butter

  • 2 tbsp. brown sugar

  • 1 tsp. cinnamon

  • 1 tsp. garlic powder

  • 1 tsp. salt

  • 1 tsp. pepper

Instructions

  1. Prepare the Grill and Pork: Preheat your grill to medium-high heat. Pat the pork chops dry with a paper towel. In a small bowl, mix together the olive oil, garlic powder, salt, and pepper. Rub the mixture evenly over all sides of the pork chops.

  2. Prepare the Apples: Core the apples and slice them horizontally into ½-inch thick rings. In another small bowl, whisk together the melted butter, brown sugar, and cinnamon. Brush this mixture generously over both sides of the apple rings.

  3. Grill the Pork: Place the pork chops on the preheated grill. Cook for 5-7 minutes per side, or until the internal temperature reaches 145°F. The exact time will depend on the thickness of the chops. Once cooked, remove them from the grill and let them rest for 5 minutes before serving.

  4. Grill the Apples: While the pork is resting, place the apple rings on the grill. Cook for 2-3 minutes per side, until they are tender and have nice grill marks.

  5. Serve: Serve the grilled pork chops hot, topped with the warm, spiced apple rings. This dish pairs wonderfully with a simple green salad or roasted potatoes.

Tips

  • Don't Overcook the Pork: The key to a juicy pork chop is to not overcook it. Use a meat thermometer to pull the chops off the heat as soon as they reach an internal temperature of 145°F. They will continue to cook slightly as they rest.

  • No Grill? No Problem: You can easily make this dish indoors. Pan-sear the pork chops in a hot skillet with a little oil for the same amount of time. The apples can be cooked in the same skillet after the pork, or roasted in a 400°F oven for 10-12 minutes.

  • Spice It Up: Add a pinch of cayenne pepper or a dash of smoked paprika to the pork chop rub for a little extra heat and smoky flavor. For a more savory, herbaceous twist, add 1 tsp. of dried thyme or rosemary.

Cost Breakdown

  • 2 lbs. boneless pork chops (Buy one, get one free at QFC): $8.97

  • 2 lbs. local Cosmic Crisp apples ($0.99/lb. Saturday & Sunday only at QFC): $1.98

  • Pantry staples (oil, butter, sugar, spices): approx. $2.45

  • Total: $13.40

  • Per serving (for 4): $3.35
