Meal Deal
Last week’s stuffed-burger meal deal turned out excellent. I’ll definitly be saving that recipe for future use.
This week, we’re cooking Korean-inspired ribs perfect for the July 4 weekend!

This week’s meal-deal tastes like a million bucks. I made the Korean-inspired BBQ ribs with the spicy-tangy-creamy gochujang coleslaw for dinner last night. Yum. (Bryan M. Vance/Stumptown Savings)
Korean-style BBQ Ribs With Gochujang Coleslaw
Yields: 4 servings | Cost: About $25.48 total (About $6.37 per serving) | Time: About 45 minutes

Ingredients
For the Korean-style BBQ Ribs:
2 lbs. flanken-cut ribs
½ cup soy sauce
¼ cup brown sugar
2 tablespoons rice vinegar
3 cloves garlic, minced
1 tablespoon sesame oil
1 teaspoon grated fresh ginger
2 green onions, chopped
1 tablespoon sesame seeds
For the Gochujang Coleslaw:
1 small head green cabbage, thinly sliced (about 6 cups)
1 large carrot, grated
2 green onions, sliced
⅔ cup mayonnaise
2-3 tablespoons gochujang (Korean chili paste)
1½ tablespoons rice vinegar
1 tablespoon sugar
¼ teaspoon salt
For the Steamed Rice:
1½ cups jasmine rice
2¼ cups water
½ teaspoon salt
Instructions
Prepare the ribs:
Whisk together soy sauce, brown sugar, rice vinegar, garlic, sesame oil, and ginger in a bowl.
Marinate ribs for at least 30 minutes (or up to 4 hours for deeper flavor).
Heat grill to medium-high. Grill ribs 2-3 minutes per side until caramelized and cooked through (The flanken-style cut means they cook fast.).
Garnish with green onions and sesame seeds before serving.
Make the gochujang coleslaw:
Combine sliced cabbage, grated carrot, and green onions in a large bowl.
Whisk together mayonnaise, gochujang, rice vinegar, sugar, and salt until smooth.
Pour dressing over vegetables and toss until well coated.
Refrigerate for at least 15 minutes before serving to let flavors meld.
Prepare the steamed rice:
Rinse rice until water runs clear.
Combine rice, water, and salt in a pot.
Bring to boil, reduce heat to low, cover and simmer 18 minutes.
Let stand 5 minutes before fluffing with a fork.
Tips
Timing is key: Fanken-cut ribs cook quickly due to their thin cut, so watch carefully to avoid overcooking.
Spice level: Start with 2 tablespoons of gochujang and add more to taste — you can always add heat but can't take it away.
Make ahead: The coleslaw actually improves after sitting for a few hours as the flavors meld together.
Rice perfection: Don't lift the lid while the rice is cooking — this releases steam and can result in unevenly cooked rice. (Or use a rice cooker, which makes perfect rice with minimal effort.)
Gochujang substitute: If you can't find gochujang, you can substitute with 2 tablespoons sriracha plus 1 teaspoon miso paste.
