Meal Deal

Last week’s meal deal of fresh rockfish tacos with peach salsa was delicious! I cooked it up over the weekend for a healthy, low-cost lunch option and holy cow, am I keeping this one in my back pocket for the next time rockfish is on sale again.

Looking at this week's deals, I'm excited about the Market of Choice ground beef deal and think stuffed burgers would be perfect! Here's a simple, satisfying recipe that feeds four people comfortably under budget:

Cheese-Stuffed Burgers with Roasted Potato Wedges

Yields: 4 servings | Cost: About $19.25 total (About $4.81 per serving) | Time: About 35 minutes

Ingredients

For the Stuffed Burgers:

  • 1¼ pounds Local Royal Ranch 85 percent lean ground beef

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 4 slices sharp cheddar cheese

  • 4 hamburger buns

  • 2 tablespoons olive oil

For the Potato Wedges:

  • 2 large russet potatoes

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

Toppings:

  • 4 lettuce leaves

  • 1 large tomato, sliced

  • ¼ red onion, sliced thin

  • Ketchup and mustard

Instructions

Prepare the Potato Wedges:

  1. Preheat oven to 425°F. 

  2. Wash and cut potatoes into eight wedges each.

  3. Toss wedges with olive oil, garlic powder, paprika, salt, and pepper.

  4. Arrange on baking sheet and roast for 25-30 minutes until golden and crispy.

Make the Stuffed Burgers:

  1. Season ground beef with garlic powder, onion powder, salt, and pepper. Mix gently.

  2. Divide meat into eight equal portions. Form into thin patties.

  3. Place one slice of cheese on four patties, leaving a border around edges.

  4. Top each with remaining patties and press edges firmly to seal completely.

  5. Heat olive oil in a large skillet or grill pan over medium-high heat.

  6. Cook burgers for 4-5 minutes per side until internal temperature reaches 135°F (for medium rare).

  7. Let rest 2 minutes before serving.

Assemble and Serve: 

  1. Toast buns lightly if desired. 

  2. Build burgers with lettuce, tomato, onion, and condiments. 

  3. Serve alongside crispy potato wedges.

Tips

  • Sealing is key: Really press those burger edges together to prevent cheese from leaking out during cooking.

  • Don't overwork the meat: Mix seasonings gently to keep burgers tender.

  • Cheese options: Sharp cheddar melts beautifully, but Swiss, pepper jack, or American cheese work great too.

  • Make it vegan: Sub the beef for Impossible or Beyond Meat ground “meat”, and the cheese for your favorite vegan cheddar.

  • Make ahead: Form patties earlier in the day and refrigerate until cooking time.

  • Potato perfection: Soaking cut potatoes in cold water for 30 minutes before seasoning creates extra-crispy wedges.
