Chicken is at its cheapest price in weeks, asparagus is still in its local new-crop window, mangos are plentiful and cheap, and there's good grass-fed ground beef at Grocery Outlet for anyone who wants to upgrade their burger game. Here's what we'd make with all of it this week — plus a rhubarb cobbler that's the right call for the first warm weekends of May.
Thick bone-in (you can easily swap for boneless) pork chops get seared, then finished low with snap peas, fresh mint, and crumbled feta that melts right into the pan juices. A big squeeze of lemon at the end cuts through all that richness. One pan, maybe 30 minutes, and it looks like you tried way harder than you did.
The secret is baking powder in the seasoning mix — it pulls moisture from the skin and gives you a genuinely crispy exterior without any frying. Pantry spices, a rack in the oven, and about 40 minutes is all this takes.
Butter lettuce, diced mango, red bell pepper, and a peanut-lime dressing that you'll want to put on everything — it's the kind of salad that actually fills you up. Works as a side, a light dinner, or the dish you bring to a potluck.
The trick to a good smash burger is a smoking hot cast iron or steel pan and no extra oil. Just drop your beef, smash it flat with a heavy spatula, and let it sear until you get those crispy, lacy edges. That crunch is the whole point!
The rhubarb goes into the oven first on its own, which lets the juices reduce into a sweet-tart syrup before the biscuit rounds ever go on top — no cornstarch needed, and the flavor stays bright and clean. The biscuit topping is scented with a little vanilla and orange zest, and you finish it with a drizzle of heavy cream or a scoop of ice cream. It's the right dessert for the first real weekend of May.
