Each week, I share a simple meal idea based on the deal items. Feel free to adapt as you see fit. It's meant to serve as inspiration to help you see the possibilities of having delicious, high-quality meals that don't break the bank. This week: Grilled chicken and asparagus pasta with cherry tomatoes. 

Grilled Chicken & Asparagus Pasta with Cherry Tomatoes

Yields: 4 servings | Cost: About $15.86 total (About $3.97 per serving) | Time: About 30 minutes

Featuring deals from Fred Meyer through May 13

Ingredients

  • 1 pound boneless skinless chicken breasts

  • 1 pound green asparagus

  • 1 pint cherry tomatoes

  • 8 ounces pasta (penne or bow tie)

  • 2 cloves garlic, minced

  • 1 lemon (for juice and zest)

  • 2 tablespoons olive oil

  • 1/4 cup grated Parmesan cheese 

  • 1/4 cup fresh basil, chopped (optional)

  • Salt and pepper to taste 

  • 2 tablespoons butter 

Instructions

  1. Prep the ingredients: Trim the woody ends from the asparagus and cut into 2-inch pieces. Slice the cherry tomatoes in half. Mince the garlic. Cut the chicken breasts into 1-inch cubes.

  2. Cook the pasta: Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.

  3. Cook the chicken: While pasta is cooking, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season chicken cubes with salt and pepper, then add to the hot skillet. Cook for 5 to 7 minutes, stirring occasionally, until chicken is golden brown and cooked through (165 F internal temperature). Remove chicken to a plate.

  4. Cook the vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add asparagus and cook 3 minutes. Add garlic and cook 30 seconds until fragrant. Add the cherry tomatoes and cook 2 more minutes until asparagus is tender-crisp and tomatoes begin to soften.

  5. Combine everything: Return chicken to the skillet. Add drained pasta, butter, lemon zest and 2 tablespoons of lemon juice. Toss everything together, adding a splash of reserved pasta water if needed to create a light sauce. Season with salt and pepper to taste.

  6. Finish and serve: Remove from heat and stir in grated Parmesan cheese and fresh basil (if using). Serve immediately.

Tips

  • Make it vegetarian: Skip the chicken and double the vegetables, or add a can of white beans for protein.

  • Spice it up: Add red pepper flakes for some heat.

  • Leftovers: This dish keeps well in the refrigerator for 2 to 3 days and can be enjoyed cold as a pasta salad.

  • Meal prep: You can cook the chicken and vegetables ahead of time and just toss with freshly cooked pasta when ready to serve.
