🍜 Meal Deal
Each week, I'll share a simple meal idea based on the deal items. Feel free to adapt as you see fit. It’s meant to serve as inspiration to help you see the possibilities of having delicious, high-quality meals that don’t break the bank. This week: we’re leaning into the theme of the sales — Easter Sunday.
Easter Ham Dinner with Roasted Asparagus and Sweet Potatoes
Total Cost: Approximately $15.08 for 4 servings ($3.77 per serving)
Ingredients
2 lbs Cook's bone-in ham portions
2 lbs asparagus
2 lbs sweet potatoes
1 package Grands! biscuits
4 oz Tillamook cheese, shredded
2 tablespoons butter
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon brown sugar
1 tablespoon Dijon mustard
1 tablespoon honey
1 orange (for zest and juice)
Fresh thyme (if you have it) or 1 teaspoon dried
Salt and pepper to taste
Optional: 1 pineapple
Instructions
Preheat your oven to 350°F.
For the ham glaze: In a small saucepan, combine 1 tablespoon butter, brown sugar, Dijon mustard, honey, zest and juice from half the orange, and a pinch of salt. Heat on low until combined and slightly thickened.
Place ham in a baking dish. Score the surface in a diamond pattern if not pre-scored. Brush with half the glaze. Cover with foil and bake for 15 minutes per pound (about 30 minutes for 2 lbs).
While ham bakes, wash and trim asparagus. Toss with 1 tablespoon olive oil, half the minced garlic, salt, and pepper. Set aside.
Wash and cut sweet potatoes into 1-inch chunks. In a bowl, toss with remaining olive oil, garlic, thyme, salt, and pepper.
Spread sweet potatoes on a baking sheet and place in oven with ham for the last 25 minutes of ham cooking time.
Remove ham, uncover, brush with remaining glaze, and return to oven uncovered. Add the asparagus to the sweet potato baking sheet.
Bake everything for 10-15 more minutes until ham is caramelized, asparagus is tender-crisp, and sweet potatoes are soft.
During the last 10 minutes of cooking, prepare the Grands! Biscuits according to package directions.
For cheesy biscuits (optional): Sprinkle shredded Tillamook cheese on top of biscuits during the last 3 minutes of baking.
Let ham rest for 5 minutes before slicing. Serve with roasted vegetables and biscuits.
Tips
Substitute green beans for asparagus if preferred.
For a vegetarian version, replace ham with extra veggies like more sweet potatoes, onions, regular potatoes, Brussels sprouts, etc.
Save the ham bone and use it to flavor some soup later in the week.
Use any leftover ham in breakfast omelets or sandwiches.
