Each week, I'll share a simple meal idea based on the deal items. Feel free to adapt as you see fit. This week: we’re cooking up a simple, but high quality dish using sustainably caught PNW rockfish.

Panko-Crusted Rockfish with Lemon Herb Sauce

Yields: 4 servings | Cost: About $18.48 total (About $4.62 per serving) | Time: About 25 minutes

Ingredients

  • 1½ pounds local wild-caught rockfish fillets

  • 2 organic leaf lettuce bunches

  • ½ cup all-purpose flour

  • 1 large egg

  • 2 tablespoons milk

  • ¾ cup panko breadcrumbs

  • ¼ cup grated parmesan cheese

  • 2 tablespoons olive oil

  • 1 lemon

  • 2 cloves garlic, minced

  • 1 tablespoon fresh herbs (parsley, dill, or thyme), chopped

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F and place a large oven-safe skillet (I like cast iron) inside to heat up.

  2. Set up your dredging station: In a shallow dish, combine flour, salt, and pepper. In another dish, whisk together the egg and milk. In a third dish, mix panko breadcrumbs and parmesan cheese.

  3. Pat the rockfish fillets dry with paper towels and check for any bones. If the fillets are large, cut them into serving-sized pieces.

  4. Dredge each piece of fish first in the seasoned flour, shaking off excess. Then dip into the egg mixture, allowing excess to drip off. Finally, coat with the panko-parmesan mixture, pressing gently to adhere.

  5. Let the breaded fillets rest for 1-2 minutes while you carefully remove the hot skillet from the oven. Add the olive oil to the skillet and return to the oven for 1 minute to heat the oil.

  6. Carefully place the breaded fillets in the hot skillet. Bake for 4 minutes, then flip the fillets and bake for another 4 minutes until golden brown and the fish flakes easily with a fork (internal temperature of 145°F).

  7. While the fish is baking, prepare a simple lemon herb sauce: In a small bowl, combine 1 tablespoon olive oil, lemon juice and zest, minced garlic, and chopped herbs.

  8. Wash and dry the lettuce leaves and arrange them on serving plates.

  9. When the fish is done, remove from the oven and immediately transfer to the prepared plates. Drizzle with the lemon herb sauce and serve.

Tips

  • Fish selection: This recipe works with any white fish.

  • Make ahead: Prepare the lemon herb sauce up to a day ahead to save time.

  • Serving suggestion: For a more substantial meal, add some cooked rice or quinoa, or serve with crusty bread.

  • Leftovers: Store any leftover fish in an airtight container in the refrigerator for up to 2 days. Reheat in a 350°F oven for about 10 minutes.
