Meal Deal

If you can’t tell by how often I talk about it, I’m obsessed with Hatch chiles. These New Mexican peppers are unlike any other, with a bold, earthy flavor that really shines when they’re roasted. Thankfully, Oregon grocers have good relationships with chile farmers in the Hatch Valley, and with the chiles on sale this week alongside pork loin, we're cooking up one of my favorite dishes: Chile Verde.

We're adapting a traditional recipe from Clyde Casey's "Red or Green: New Mexico Cuisine" (💰affiliate link) to create a straightforward, flavor-packed stew that can feed a family of four for under $20—perfect for a late summer evening.

New Mexican Chile Verde

Adapted from Clyde Casey’s Chile Verde recipe in “Red or Green: New Mexican Cuisine” | Yields: 4-6 servings | Cost: About $16.41 total (About $4.10 per serving) | Time: About 1 hour, 30 minutes

Ingredients

  • 2 lbs. fresh boneless pork loin roast

  • 1 (2 lb.) bag of Hatch chile peppers

  • 1 large yellow onion, chopped

  • 6 cloves garlic, minced

  • 1 (28-ounce) can crushed or diced tomatoes, undrained

  • 1 tsp. dried oregano

  • 1 tbsp. ground cumin

  • 2 tbsp. vegetable or olive oil

  • 2 bay leaves

  • Salt and freshly ground black pepper to taste

  • For Serving: cooked rice, fresh cilantro, and sliced avocado

Instructions

Prepare and cook the meal:

  1. Roast the chiles: Preheat your broiler. Place the Hatch chiles on a baking sheet and broil for 5-8 minutes, turning occasionally, until the skins are blistered and blackened. Transfer the hot chiles to a bowl and cover with plastic wrap or a plate to steam for 10 minutes. Once cool enough to handle, peel away the skins, remove the stems and seeds, and give them a rough chop.

  2. Sear the pork: While the chiles are steaming, trim any excess fat from the pork loin and cut it into large bite-sized cubes. Season generously with salt and pepper. Heat the oil in a large Dutch oven or heavy pot over medium-high heat. Add the pork in batches and brown on all sides. Transfer the browned pork to a plate.

  3. Build the stew: Reduce the heat to medium, add the chopped onion to the pot, and cook until softened, about 5 minutes. Stir in the minced garlic, oregano, and cumin, and cook for another minute or two until fragrant.

  4. Simmer: Return the pork to the pot. Add the bay leaves, chopped roasted chiles and the undrained can of tomatoes. Stir everything together, scraping up any browned bits from the bottom of the pot. Bring to a simmer, then reduce the heat to low, cover, and cook for at least 1 hour, or until the pork is tender.

  5. Finish and serve: Uncover the pot and simmer for another 10-15 minutes to allow the sauce to thicken slightly. Season with additional salt and pepper to taste. Serve the chile verde hot over a bed of white rice, garnished with fresh cilantro and sliced avocado.

Tips

  • Roast Ahead: Hatch chiles can be roasted, peeled, and chopped ahead of time for easier preparation when it’s time to cook, and you can freeze the chiles once they’re roasted and peeled for long-term storage. (I have many pounds of these in my freezer.)

  • Control the Heat: Hatch chiles can vary in spiciness. For a milder chile, be sure to remove all seeds and membranes. If you like it hot, leave some in!

  • Pork Options: The recipe from "Red or Green" calls for pork shoulder, but the boneless pork loin roast on sale at Albertsons/Safeway is a great, lean alternative. Because it's leaner, be careful not to overcook it during the searing stage.

  • Make it Ahead: Like most stews, this chile verde is even better the next day after the flavors have had more time to meld together.
