What We’re Cooking
It’s been a wet, cold week. I’ve been riffing off old favorites (like breakfast for dinner) rather than cooking real recipes as we’ve been fostering a rambunctious French bulldog since Friday (his name is David and he’s available for adoption), but I’m eager for some filling, comforting meals this weekend to celebrate his hopeful adoption this week. Here are some ideas you can cook using deals like dirt-cheap potatoes and onions ($0.50/lb. Friday only at Albertsons/Safeway), and abundant, cheap cabbage to make hearty, delicious meals that won’t break the budget.
A thick, soul-warming Italian "pasta and beans" stew that relies on pantry staples to create a filling, high-fiber meal. This recipe is a budget powerhouse this week and vegan. However, if you have a leftover cheese rind in your fridge, simmer it with the beans for incredible depth of flavor.
