What We’re Cooking

This week, I’m leaning into comfort foods that stretch the dollar. We have incredible prices on pork shoulder and chicken drumsticks, plus a "run, don't walk" deal on free-range eggs that is begging to be turned into a frittata. Here are soem ideas for what to cook this week.

No-Waste Tacos de Carnitas

With pork shoulder roasts on sale at Chuck’s, Roth’s, and New Seasons (around $4.99/lb), this is the weekend to make a big batch of Carnitas. This Serious Eats’ "No-Waste" method packs the pork into a casserole dish with orange juice, onion, and spices to braise. The result is tender, juicy meat with crispy edges that freezes beautifully for future taco nights.

Filipino Chicken Adobo

NYT Cooking’s recipe is a perfect starting point for this classic Filipino dish. It uses a simple, potent marinade of vinegar, soy sauce, garlic, peppercorns, and bay leaves. The fatty drumsticks hold up to the braise, resulting in a tangy, savory, fall-off-the-bone dinner. Serve it over plenty of white rice to soak up that sauce.

Winter Greens and Potato Frittata

You can follow this template from Cookie and Kate, using green kale fand the cheap Russets or gourmet potatoes. It’s a flexible, protein-packed dinner that comes together in one skillet and tastes just as good cold for lunch the next day.
