Meal Deal
Each week, I'll share a recipe based on deal items. The idea is to inspire you to cook great meals on a budget. This week, we're cooking up a Memorial Day feast to take advantage of our sunny weekend weather.
Grilled Sirloin Sandwiches with Sweet Corn and Watermelon
Yields: 4-6 servings | Cost: About $15.23 total (About $2.54 to $3.81 per serving) | Time: About 35 minutes
Featuring deals from Albertsons/Safeway through May 27, 2025
Ingredients
2 pounds USDA Choice boneless beef petite sirloin steaks
1 tablespoon olive oil
1 teaspoon kosher salt
Β½ teaspoon black pepper
Β½ teaspoon garlic powder (optional)
4 ears fresh sweet corn
1 package (8-count) Franz hamburger buns
1 head lettuce, leaves separated (optional, for sandwiches)
2 pounds red seedless watermelon
Butter, for corn (optional)
Condiments of choice (e.g., pickles, tomatoes, mayonnaise, mustard, barbecue sauce)
Instructions
Preheat your grill to medium-high heat and remove the steaks from the fridge to bring them up to room temperature.
Pat the petite sirloin steaks dry with paper towels. Rub with olive oil and season generously with salt, pepper, and garlic powder, if using.
Husk the corn. You can grill the corn directly on the grates or wrap it in foil.
While the grill preheats, prepare the watermelon. Wash the exterior, then slice or cube the watermelon as desired. Chill until ready to serve.
Place the seasoned steaks on the hot grill. Cook for 4-6 minutes per side for medium-rare, or to your desired doneness. Cooking time will vary based on steak thickness. (Please use a meat thermometer to check for doneness β itβs for food safety!)
Place the corn on the grill. Cook for 10-15 minutes, turning occasionally, until tender and slightly charred.
During the last few minutes of grilling, you can lightly toast the hamburger buns on the grill, cut-side down, for about 30-60 seconds.
Once the steaks are cooked, remove them from the grill and let them rest on a cutting board, tented with foil, for 5-10 minutes. This helps keep the juices in.
Thinly slice the rested steaks against the grain.
Assemble the sandwiches: Spread condiments on the buns, add sliced steak, and lettuce if using.
Serve the steak sandwiches immediately with the grilled corn on the cob. Offer butter for the corn.
Serve the chilled watermelon for dessert.
Tips
Doneness: Use a meat thermometer for accuracy (and food safety). For petite sirloin, 130-135Β°F is medium-rare, 140-145Β°F is medium.
Slicing: Always slice steak against the grain for the most tender bites.
Corn Flavor: For extra flavor, you can brush the corn with melted butter and a sprinkle of salt and pepper before or after grilling.
Watermelon Prep: For easy serving, cut the watermelon into wedges or cubes.
Variations: Add sliced tomatoes, onions, pickles, or cheese to your sandwiches.
