Meal Deal

Each week, I'll share a simple meal idea based on the deal items. Feel free to adapt as you see fit. This week, I’m making some Persian food for my wife! If you’ve never had Persian food, you’re missing out. This recipe features a few of our favorite dishes in a budget-friendly format.

Persian Koobideh Kebab Feast with Mast o Musir, Salad Shirazi & Saffron Rice

Yields: 4 servings | Cost: About $19.47 total (About $4.87 per serving) | Time: About 1 hour

Featuring deals from Albertsons/Safeway through June 10

Ingredients

For the Koobideh Kebabs: 

  • 1¼ pounds ground beef, 80% lean

  • 1 medium yellow onion, grated

  • 3 cloves garlic, minced

  • ¼ cup fresh parsley, finely chopped

  • 2 teaspoons ground cumin

  • 1 teaspoon ground coriander

  • ½ teaspoon cinnamon

  • 1 teaspoon salt

  • ½ teaspoon black pepper

For the Mast o Musir (Persian Shallot Yogurt): 

  • 1 cup plain Greek yogurt

  • 2 tablespoons dried Persian shallots (musir) or 3 green onions, finely chopped

  • 1 clove garlic, minced

  • Salt to taste

For the Salad Shirazi: 

  • 2 medium cucumbers, diced small

  • 2 medium tomatoes, diced small

  • ½ red onion, finely diced 

  • ¼ cup fresh mint, chopped (if using dried, reduce to about 1 tablespoon)

  • 2 tablespoons lemon juice

  • 2 tablespoons olive oil

  • Salt and pepper to taste

For the Persian Rice: 

  • 2 cups basmati rice

  • Pinch of saffron threads

  • 2 tablespoons hot water

  • 3 tablespoons butter

  • Salt to taste

Instructions

Make the Mast o Musir:

  1. Mix yogurt, dried shallots (or green onions), minced garlic, and salt.

  2. Refrigerate for at least 30 minutes to let flavors meld (I like to make it the night before for the best flavor).

Prepare the Rice:

  1. Rinse basmati rice until water runs clear. Soak for 30 minutes, then drain.

  2. Grind the saffron in a mortar and pestle, then steep it in hot water to create saffron water.

  3. Boil salted water, add rice, cook until al dente (about 6-8 minutes). Drain.

  4. In the same pot, melt butter, add rice back, drizzle with saffron water. Wrap the pot lid in a clean kitchen towel. Cover the pot with the towel-wrapped lid and cook on low for 45 minutes.

Prepare Salad Shirazi:

  1. Combine diced cucumbers, tomatoes, and red onion in a bowl.

  2. Add mint, lemon juice, olive oil, salt, and pepper. Toss well.

  3. Let sit for 15 minutes before serving.

Make the Kofta Kebabs:

  1. Grate onion and squeeze out excess liquid (save the juice for moisture).

  2. In a large bowl, combine ground beef, grated onion, garlic, parsley, cumin, coriander, cinnamon, salt, and pepper.

  3. Mix thoroughly with your hands until well combined.

  4. Divide into 8 portions and shape around skewers into long oval shapes.

  5. Grill over medium-high heat for 8-10 minutes, turning occasionally, until cooked through (internal temp 160°F).

To Serve: 

Arrange kofta kebabs over rice, with sides of mast o musir and salad shirazi.

Tips

  • Authentic touch: If you can find dried Persian shallots (musir) at a Middle Eastern market, use them instead of green onions (both World Foods and La Boufe sell this) 

  • Make ahead: The yogurt sauce and salad can be made hours ahead 

  • Skewer substitute: If you don’t have skewers, form the koobideh into patties and pan-fry

  • Rice perfection: Don't lift the lid while rice steams — this creates the perfect fluffy texture

  • Go for gold: If you want a TRUE Persian experience, make Tahdig. It’s difficult, but holy cow is this perfectly golden crust of fried rice AMAZING

Cost Breakdown

  • 1¼ pounds ground beef (Safeway/Albertsons deal at $3.99/lb.): $4.99

  • 1 medium yellow onion: $0.75

  • 2 cups basmati rice: $2.

  • 1 cup Greek yogurt: $1.50

  • 2 cucumbers: 1.50

  • 2 tomatoes: $2

  • ½ red onion: $0.50

  • Fresh herbs, spices, lemon juice: $6.23

  • Total: $19.47

  • Per serving (for 4): $4.87

This authentic Persian feast comes in just under budget and gives you a restaurant-quality meal at home! The combination of aromatic spices, fresh herbs, and traditional accompaniments creates an unforgettable dining experience.
