This crowdsourced initiative lets us document egg prices across the city — together. Simply log prices when you shop via a quick form, and I'll add verified data to our live database. Why eggs? They're a ubiquitous ingredient and prices vary dramatically. Even with bird flu concerns fading, tracking these costs will reveal fascinating patterns and help us all shop smarter. Meal Deal
Each week, I share a simple meal idea based on the deal items. This week: a vibrant stir-fry using chicken and colorful spring produce.
Spring Chicken and Mango Stir-Fry
Yields: 4 servings | Cost: About $9.97 total (About $2.49 per serving) | Time: About 10-15 minutes prep, 10-15 minutes cook
Ingredients:
1 1/2 pounds boneless, skinless chicken thighs
2 bell peppers, any color
1 pound carrots
1 ripe yellow mango
1 medium yellow onion
2 cloves garlic, minced
1-inch piece fresh ginger, grated
2 cups uncooked rice (such as basmati or jasmine)
1/3 cup soy sauce
1 tablespoon brown sugar
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 tablespoon cornstarch
1/4 cup water
2 tablespoons cooking oil (such as vegetable or canola)
Optional garnish: Sliced green onions, sesame seeds
Instructions:
Cook rice according to package directions. While rice cooks, prepare the remaining ingredients.
Cut chicken thighs into bite-size pieces, trimming excess fat if desired.
Wash and chop the bell peppers and onion into roughly 1-inch pieces. Peel the carrots and slice thinly on a diagonal. Peel the mango, cut the flesh away from the pit and dice into chunks.
In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, cornstarch and water until smooth. Set aside.
Heat 1 tablespoon cooking oil in a large skillet or wok over medium-high heat. Add chicken pieces in a single layer (cook in batches if needed to avoid crowding). Cook until browned and cooked through, about 5 to 7 minutes. Remove chicken from skillet and set aside.
Add the remaining 1 tablespoon oil to the hot skillet. Add onions, carrots and bell peppers. Stir-fry for 3 to 4 minutes, until vegetables are tender-crisp. Add minced garlic and grated ginger; cook 1 minute more, until fragrant.
Return the cooked chicken to the skillet. Add the diced mango. Whisk the sauce again briefly and pour it over the chicken and vegetables. Stir to combine and cook for 1 to 2 minutes, until the sauce bubbles and thickens, coating the ingredients.
Serve immediately over cooked rice. Garnish with sliced green onions or sesame seeds, if desired.
Tips:
Spice it up: Add a pinch of red pepper flakes or 1 teaspoon sriracha to the sauce for heat.
Add more vegetables: Asparagus would be a great addition; add it with the bell peppers. Broccoli florets or snap peas also work well.
Vary the protein: Boneless pork loin chops or shrimp can substitute for chicken, though costs will change.
Make it vegan: Substitute cubed firm tofu for the chicken (press well first), or omit protein for a vegetable-only stir-fry.
Make it gluten-free: Use tamari or coconut aminos instead of soy sauce and ensure your rice vinegar is certified gluten-free.

2 cups rice: $1.50
Sauce ingredients and oil: $1.00
