🍜 Meal Deal
Each week, I'll share a simple meal idea based on the deal items. Feel free to adapt as you see fit. This week: tacos with a corn and black bean salad.
Chicken or Shrimp Tacos with Corn and Black Bean Salad:
Approximately $11.11, or $2.78 a serving (serves 4)
For the Tacos
1 lb boneless skinless chicken breasts or thighs OR shrimp
1 tablespoon cooking oil
1 teaspoon chili powder
1 teaspoon ground cumin
½ teaspoon garlic powder (or 1 minced clove)
½ teaspoon each salt and pepper
8 small tortillas
Optional toppings: shredded lettuce, diced tomatoes, cheese
For the Corn and Black Bean Salad:
1 can (15 oz) black beans, drained and rinsed
1 cup frozen corn
½ cup diced tomatoes
¼ cup diced onion
1 jalapeño or bell pepper, diced (optional)
Juice of 1 lime
1 tablespoon oil
¼ teaspoon cumin
Salt and pepper to taste
Optional: fresh cilantro
Instructions
Prepare the salad:
Combine black beans, corn, tomatoes, onion and jalapeño in a bowl.
Whisk together lime juice, oil, cumin, salt and pepper.
Pour dressing over salad and toss to combine. Set aside to marinate.
Cook the protein:
Cut chicken into bite-sized pieces (or peel and devein shrimp if needed).
Toss with chili powder, cumin, garlic powder, salt and pepper.
Heat oil in a skillet over medium-high heat.
Cook chicken for 5-6 minutes until no longer pink (or shrimp for 2-3 minutes per side until pink).
Assemble:
Warm tortillas in a dry skillet or microwave.
Fill with cooked protein and desired toppings.
Serve with the corn and black bean salad on the side.
